How I accidently lost 14 pounds

I am not a certified dietician or nutritionist. I am a student like most of you. I have read, listened to and observed others. And, I have experimented as I believe diet and exercise routines are very personal. As always, if you can get professional advice, great! If you are like me, you will consider various things and then adapt them to yourself until you find what works. For me there are two keys (actually 3 but 3rd is obvious) to a successful diet. First, it has to be sustainable. If you don't choose a diet and process that is sustainable, your improvements will be short-lived; the weight just returns. Second, it must work. Third, it should be fundamentally healthy. I have tried the Tim Ferris' 30-30-30 diet, carnivore, grazing, and then found out about intermittent fasting. Intermittent fasting is the concept that with 24 hours in a day, we only eat during a set number of those hours so 8 or 9 or 10 hours. The rest of the time we don't consume any glucose. The idea being that if we give our body time to burn off the glucose we have eaten, the body then reverts to burning stored fat. So my regime has been to each from 12:00 noon to 8:00pm. I have other videos and a free diet guide. But I eat lots of fiber, pro and pre-biotics, lean protein, and good carbohydrates. I eat a lot of avocados, eggs, cooked potatoes, steamed vegetables and various meats and salads. However, I am not overly rigid during my eating window as I don't want rigidity to trigger a feeling that I am deprived. I keep alternatives around for things I want to avoid, e.g. for sugar I keep cut pineapple in the refrigerator, for salty cravings I keep salted nuts. And, I always keep my favorite cut veggies in the refrigerator. However, when those don't sate my cravings, I eat what I want during the eating window. I am fortunate that I really like black Colombian coffee which I drink in the morning and evening. I started at a weight of 240 pounds with a goal of 225 which I had always considered my plateau and a good target. When I reached 225 I didn't really change anything but was no longer as focused. I still tend to weigh myself when I go to the gym. One day a couple weeks later I had to make sure the scale was accurate as I had dropped to 2011! And, I didn't even feel like I was dieting or doing anything excessive. No alcohol, following my fasting routine and eating foods I enjoy. My weight loss has continued until I found myself sort of levelling off at 207 lbs.
